We are not going to spend a whole page telling you it is us. Here are the five things that actually separate a great cookie from an expensive one, so you can judge any bakery in town for yourself. Including this one.

The Five Tests
Read the Fat
Butter or shortening. That single choice decides most of how a cookie tastes and nearly all of how it feels. Shortening gives you a taller, softer cookie that tastes faintly of nothing. Butter spreads more, browns properly, and tastes like butter. If a bakery will not tell you which one they use, you already know.
Ask When It Was Baked
A great cookie has a window of about three days. Ask what time today's batch came out. A confident answer is a good sign. A vague one usually means the cookie was baked somewhere else, at some other time, and warmed up for the case.
Look at the Edge
A cookie baked fresh has a defined edge with real color variation, darker where it spread and caught the pan. A cookie that was frozen after baking and thawed goes uniformly pale and slightly damp at the rim. Once you notice it you cannot stop noticing it.
Check the Chocolate
Real chocolate snaps and melts on your tongue. Chocolate-flavored coating, which is what most volume bakeries use, goes waxy and coats the roof of your mouth. Cheaper, more shelf stable, and instantly recognizable once you have had the real thing beside it.
Count the Ingredients
A cookie needs flour, butter, sugar, eggs, vanilla, salt, leavening, and chocolate. If the label runs to twenty items and several are there to extend shelf life, you are buying a product engineered to survive distribution, not to taste good on a Tuesday.

- You want twelve flavors. We make two and we make them properly.
- You need a commercially inspected kitchen for a policy reason.
That second list costs us orders. We would still rather you read it now than be disappointed later.
